Conscientiously harvested, the cacao beans used to extract our organic Cacao Butter Drops come from an organic supplier with an extensive presence in farming communities throughout Peru. Maintaining the highest quality and organic standards is of utmost importance, hence the supplier carries monthly audits and offers technical assistance to all farmer communities that supply the cacao beans. The farmers employ environmentally-friendly practices to grow and harvest cacao beans.
The cacao beans are always single-origin, pesticide-free and preserve a uniquely fine and aromatic flavour profile.
Brought directly from farm to factory, cacao beans are carefully washed before being lightly toasted for approximately 45 minutes. At this point, further development of flavour occurs and the outer shell is loosened from the bean. The shells are removed and cacao nibs are retained. These are milled until they turn into a liquid brown mass called ‘cacao liquor’. Cacao liquor is then sterilised and mechanically pressed to remove the cocoa butter present in the bean.
