Acai Blueberry Vegan Ice Cream

Nothing says summer like the refreshing taste of sweet berries!

Enjoy them in a vegan ice cream supercharged with vitamin A dense Acai powder. This easy vegan recipe is made with fresh blueberries to get a wonderfully vibrant colour and zingy flavour. We added a squeeze of lime to obtain the perfect balance of acidity and sweetness.

It requires no ice cream machines and it's ready within minutes. Simply blend a few natural, wholesome ingredients in a blender, place in the freezer for a few hours and enjoy on a hot summer day!

Ingredients

  • 150g of cashews (soak them in room temperature water for 2 hours before using)
  • 1 tin of coconut milk (just use the cream of the coconut not the water)
  • 1 tbsp (10g) of Naturya Acai Powder
  • 2 tbsp of agave or maple syrup
  • 1 tbsp of vanilla extract
  • 200g of blueberries
  • Juice of a lime

Method

  • Add all of the ingredients apart from the blueberries into a blender and blend until smooth.
  • Once smooth transfer to a bowl and add your blueberries.
  • Transfer to a freezer safe dish and place in the freezer for around 2 hours or until set. 
  • Remove from the freezer and serve as you wish.
