Ingredients
- Dry Ingredients
- 180g gluten free self raising flour
- 1 tsp baking powder
- 2 tsp (10g) Naturya Green Blend
- 1 tsp (5g) Naturya Chlorella Powder
- 1/4 tsp sea salt
- Wet Ingredients
- 75g Naturya Coconut Oil
- 80g banana(preferably overripe)
- 100g Naturya Coconut Sugar
- Filling
- Naturya Cashew & Hazelnut spread
Method
- Preheat the oven to 170℃
- Sift all the dry ingredients into a large mixing bowl
- Combine the coconut oil, banana and coconut sugar and mix until you have a smooth paste
- Add a tablespoon of the dry mix to the wet ingredients and carefully mix together, repeat with another tablespoon of the dry mix
- Add the wet mix to the rest of the dry mix and carefully mix together until fully combined
- Chill in the fridge for 10 minutes
- Roll into small equally sized balls (around 20g each) and place on a baking tray, keeping a gap between each one
- Using the bottom of a glass, slightly flatten each ball into a thick disk
- Bake for 8-10 minutes until, being careful not to let them go too brown
- Transfer to a cooling rack and allow to cool completely
- Place half a teaspoon of Cashew & Hazelnut spread to the underside of one cookie, then place another cookie onto, gently squeezing together to create a sandwich. Repeat with the remaining cookies and enjoy!
